Audacity - Free, open source audio recording software. Start your own Podcast or use it to record your Skype calls. Easy to use, but has advanced features for the techy in you.

Catch - Similar to Evernote and Springpad, Catch is a free note taking application that lets you record your ideas wherever you are. Visually appealing and easy to use.
